Zucchini "Crab" Cakes
These taste nothing like crabmeat, but I guess that the texture might be distantly similar. They are basically a savory pancake.
1 large grated zucchini (don't bother peeling off the dark green outer layer, just wash it first)
1/2 cup chopped onion, fried for about two minutes
2 eggs beaten or Egg Beaters
1 teaspoon mustard, or more if you are Matt
A pinch of dried dill weed
Some paprika if you have it
1 teaspoon Mrs. Dash, garlic powder, 1 vegetable broth cube mashed, or other powdered seasoning
1 tablespoon flour
1/2 cup milk
1 cup breadcrumbs, cornflake crumbs, or cracker crumbs
Salt to taste, I like a lot of salt
1 teaspoon lemon juice
Eye of Newt (just kidding)
Vegetable oil for frying
A frying pan
Take one bowl and place every ingredient in it except the oil and frying pan. Mix it all together until all ingredients are well blended. The result should look like very thick chunky pancake batter. If the mixture is too dry, add milk. If it is too wet, add breadcrumbs.
Oil the frying pan and heat it up on medium to high. Drop the batter in small spoonfuls and fry as you would a pancake, flipping after about 2 minutes and browning well on both sides. Serves 3 to 4 as a side dish.
