Sweet and Sour Loaf

Aunt Barb gave me this recipe. She's also a cooking master of really hard-to-make stuff like decadent cinnamon rolls. Basically she could cook a spare tire and it would taste good.

LOAF

1 medium onion, chopped
6 slices cubed whole wheat bread
1/2 cup butter
1 20 ounce can of Vegeburger
2 cups grated mild cheddar cheese
4 eggs, beaten
1 teaspoon garlic powder
1 teaspoon dried sage
Saute onion in butter. Stir in cubed bread, coat with onion-butter mixture.
Mix in large bowl: Vegeburger, cheese, egg, garlic, and sage. Add bread mixture and stir.
Press into baking dish, bake at 350 for 30 minutes. Meanwhile, make the topping.
Remove dish from oven but leave oven on. Cover with sauce and return to oven for 15 minutes.

TOMATO-DATE SAUCE

Alternately, you can use 1 cup tomato catsup with 1 tablespoon of sugar mixed in.

1 cup fresh, chopped tomatoes
1/4 cup onion, chopped
1/2 cup sundried tomatoes, chopped
1/2 teaspoon minced garlic
3/4 teaspoon minced jalapeno pepper
4 fresh basil leaves
1/2 cup chopped, pitted dates
Olive oil or tomato juice for blending
1/4 cup of soy sauce or 1 teaspoon sea salt
1 tablespoon olive oil

Combine in a food processor and blend. Add a little olive oil or tomato juice if mixture is too thick. Stir in salt or soy sauce last. Keeps for 2 days in fridge.
