Queenie Beanie
Beans and rice, the two super-cheap yet nutritionally complete vegetarian staples of the Universe, can be easily transformed with a little seasoning. This is starving artist food, basically, can you tell I went to music college?
1 teaspoon or so of cooking oil
1 can of beans, almost any kind (navy beans, kidney beans, etc.)
Approximately 1/4 of an onion, chopped
1/2 cup red pepper, chopped
11/2 cups shredded sharp cheddar cheese
Cooked long grain rice--I use my rice cooker
Saute onions in a shallow pan and add the peppers after about two minutes. Add the pepper and stir. Then add the beans (without even draining them!) and you will have something that resembles stew. Finally, add the cheese and stir to blend.
Serve over rice.
