Slow Cooker Pea Soup

You can also make this recipe with lentils instead of peas. It's ridiculously cheap, tasty, vegan, and great for your health. I like it with rolls and butter, but you could serve it with almost any grain for a balanced whole meal.

11/2 cup dry yellow or green peas

4 cups water

2 vegetarian broth cubes

1/2 teaspoon salt

1 teaspoon onion flakes or 1/4 of an onion, chopped

Place all ingredients in the slow cooker, starting with dried peas. Cover with lid and put setting on low for 6 hours. If you need to cook it longer (say you work 8 hours and want soup when you get home), simply add an extra 1/3 cup of water for every extra hour you need.
