Oven Fried Tofu
This easy side dish makes use of my favorite food, tofu. You can adapt the recipe with your favorite herbs and spices. This tofu is great with almost any packaged noodle mix, in fact, I often serve it with Annie Chun's Garlic and Scallion Noodle Mix. I include a product called nutritional yeast in this recipe. Nutritional yeast is a product commonly available at bulk and health food stores. It adds a nutty flavor but is not necessary to the success of the recipe.
Ingredients:
1 12.3 oz package of firm or extra firm Mori-Nu tofu
4 Tablespoons nutritional yeast or fine bread crumbs
1 Tablespoon onion powder
1 teaspoon garlic powder
1-2 small Maggi vegetarian boullion cubes, crushed with a spoon or
2 teaspoons powdered vegetable broth
1/4 cup olive oil
Directions:
Preheat oven to 375 degrees.
Spread 1/4 cup of olive oil on a cookie sheet. Cut tofu into bite sized cubes and lay the cubes on a cookie sheet. Sprinkle the tofu with all dry ingredients. You can mix the dry ingredients first or be lazy like me and just sprinkle them on one by one. You don't need to toss the cubes or flip them.
Put the cookie sheet with sprinkled tofu in the oven for 20 minutes. Tofu will be lightly browned.
