Mushroom Stroganoff
You can omit veggie meat altogether in this recipe (just add more fresh mushroms), but it is yummy either way.
11/2 cups frozen chopped broccoli, thawed
1-2 cups fresh sliced button mushrooms
1 package Morningstar Farm Veggie Hamburger Crumbles
1/4 of an onion, chopped
1 can cream of mushroom soup, such as Campbells
3/4-11/2 cup milk, depending on taste
1 tablespoon of mayonnaise
Cooked noodles or rice (egg or Kluski noodles are nice)
Thaw the broccoli in the microwave with a little water in the bowl, like 1/4 cup. Strain it and set it aside for later. In a deep skillet, saute the onion for two minutes. Add the thawed veggie meat (again, I use the microwave just to heat through) and broccoli. Let it all fry until the veggie meat is a little brown and broccoli is heated through. Add the mushrooms next, just browning them a little to keep the fresh flavor. Make a well in the center of the veggie meat and mushrooms. Add the whole can of soup in the well and stir, then add just as much milk and the tablespoon of mayonnaise until you get the consistency you desire. Then get out the freshly ground black pepper and you're all set.
Serve over the noodles or rice.
