Weeknights at the Veggie Diner

Vegetarian home cooking is often hard to find--for some reason, most vegetarian cookbooks have a lot of exotic ingredients that I'd love to try, but just are not practical. Sure, we all aspire to cook fabulous food--I'd love to be the master of braising beets and lighter-air-lemon souffles, but let's face facts here . . . I'm assuming that you are like me: gourmet-challenged! So I've made a couple of real life weeknight menus, food you would see at my make-believe Vegetarian Home Cooking Diner.

Week 1

Monday Queenie Beanie and Rice, Steamed Broccoli

Tuesday Cottage Cheese Oat Loaf, Mashed Potatoes, Steamed Carrots

Wednesday Slow Cooker Pea Soup, Rolls and Butter

Thursday Zucchini Crab Cakes, Garlic Buttered Noodles, Creamed Spinach

Friday Tofu Tostadas

WEEK 2

Monday Basic Fried Rice with Tofu

Tuesday Vegetarian Shepherd's Pie, Mashed Potatoes, Corn

Wednesday Oven Fried Tofu, Green Salad, Garlic Noodles

Thursday Mushroom Veggie Meat Stroganoff over Noodles or Rice

Friday Cold Crescent Roll Pizza
