Cottage Cheese Oat Loaf

Have fun inventing your own veggie meat loaves . . . once you get the hang of this recipe, you'll see that tasty veggie loaves can be made with a variety of ingredients, including the breakfast cereal Special K!

2 cups cottage cheese

1 cup bread or cracker crumbs or cooked rice

1/2 cup rolled oats

2 eggs

1/4 cup milk

2 dissolved veggie broth cubes in 1/4 cup water

1/2 cup sharp cheddar cheese, shredded

1/4 of an onion, chopped

 

Fry the onion in a little oil for two minutes, set aside. Combine all ingredients, including eggs and cooked onions, in a mixing bowl. Stir well.

Pre-grease a 13 x 9 inch baking pan and pour mixture into the pan, spreading evenly. Bake at 375 degrees for 30 minutes, until set.
